About

UPES researchers have developed probiotic-rich yogurt using local strains to promote health.

Another team developed gluten-free biscuits from finger millet (ragi), pearl millet (bajra) and buckwheat, fortified with calcium and sweetened with jaggery instead of refined sugar, as a more nutritious alternative to refined wheat flour. The work was published in Foods in 2024.
